Baked Honey Mustard Tofu

Tofu. I know it really creeps some people out. But I think it is really versatile and can adapt to any flavors you cook with it. This is a super easy recipe that takes hardly any time at all. I paired my tofu with some steamed Kale. Yum!

Ingredients: (Makes 4 Servings)

  • 1 Block Firm Tofu
  • 2 Tbsp Honey Mustard
  • 2 Tbsp Miso
  • Chopped Red Bell Pepper
  • 1/2 Chopped Onion

Directions:

  1. Mix the honey mustard and miso until well combined. Add a bit of water to thin out if necessary.
  2. Chop Tofu into cubes and combine with Pepper and Onion.
  3. Pour on Honey Mustard Sauce and mix well, until everything is coated.
  4. Let marinate for 1 hour or longer.
  5. Place on baking tray.
  6. Bake for 35 minutes at 375F.
  7. Enjoy!

  2. so my question about tofu: do you ever get nervous about soy and how it can affect your cycles or your hormones? I really haven’t done a ton of research so I’m fairly uninformed, but wondered what you take on it was? Interesting from both a nursing perspective and also from a healthy-eater perspective.

    • Ahhh! The soy question :) I really think it’s a personal choice but everything in moderation is what works for me. I buy organic non-gmo tofu, and I probably only eat it once every 2 months. I do prefer soy to dairy milk, just based off of the way that I feel after I consume both, but I try to do almond or coconut if I can (almond is what I buy, but soy is what I drink at Starbucks). I honestly am not the most educated on it either, I just try to focus on the big picture of my eating. If someone else who has looked into the research more has an opinion id love to read it :)

  3. Cool- thanks! it’s definetly an interesting topic. As someone who is trying to regulate my cycle, i am currently avoiding it at all costs. but I think everything in moderation is a great approach :)
